WONG TEI KUAT (EMPEROR RIBS)

Ingredients:
Buy 3 kilos pork ribs with an inch thick of fatty meat; is known as "Wong Tei Kuat" (Emperor ribs). 


The marinate sauce is mixing of following:


1) Pulverise 1 bulb garlic + 3 red onions + 2 pieces of ginger about the size of one's thumb in a food processor.
2) 2 table spoons of "Hoi Sin" sauce.
3) 3 table spoons of Brown Bean Paste.
4) 3 table spoons of Sesame oil.
5) 6 table spoons of Chinese wine "Shaoh Shin Hua Tiow Chiew".




Directions:
The recipe Grilled Pork Ribs as follows:
Buy 3 kilos pork ribs with an inch thick of fatty meat & is known as "Wong Tei Kuat" (Emperor ribs). Boil the ribs to get rid of blood and smell (when the meat is bloodless ) and drip-dry/towel-dry for marinate. Do not boil for long as the ribs get hard.


The marinate sauce is mixing of following:


1) Pulverise 1 [bulb] garlic + 3 red onions + 2 pieces of ginger about the size of one's thumb in a food processor.
2) 2 table spoons of "Hoi Sin" sauce.
3) 3 table spoons of Brown Bean Paste.
4) 3 table spoons of Sesame oil.
5) 6 table spoons of Chinese wine "Shaoh Shin Hua Tiow Chiew".

Place the ribs in 3 layers of plastic bags. Marinate the prepared ribs with the above mix and place them in fridge for 24 hrs.
Wrap the ribs in Al foil and cook at 180 degree C for 45 minutes to 1 hr (pending on oven heating efficiency)(make sure the ribs are at room temp). Then, open the foil to grill both sides to dry-out marinate.
