SUI YUK (PORK BELLY)

Ingredients:
2 ½ to 3 lb           Belly Pork (Nam Mei )

Seasoning:
One Tbs               Minsee (brown bean ) paste
Two tsp                Ng heung fun (five spice powder)
                                Garlic salt to taste

Directions:
1.       Score pork skin and season as above. Marinate overnight, if possible.

2.       Place in pan, skin side up, rubbing oil on scored skin. Spread table salt liberally over skin portion and roast at 230C for 20 t0 25 minutes.

3.       Withdraw pan from oven, removing the salt* now cooked in one piece. Replace pan in the oven and resume roasting at 290C for 30 to 35 minutes.

4.       When cold, cut with serrated knife on the meat side almost to the end of the skin, then use chopper to cut through the skin.


*After removing the cooked salt from the pork, crush the salt which can be reused, especially good in soups.
