Ingredients:
Garlic, chopped
Ginger
Fresh sea cucumber
Tau you bak (soy sauce pork)
Fish Sauce

Directions:
1. Heat oil in wok, fry with ginger till fragrant, add in sea cucumber and fry for a while, remove from wok and discard ginger.
2. Blanch sea cucumber in hot boiling water to remove the oil.
3. Double boil sea cucumber in stock for 40 minutes.
4. Remove the sea cucumber from the stock when done.
5. Heat oil in wok and fry garlic till fragrant, add the tau you bak and fry and add in sea cucumber, add stock and use fish gravy to season (she emphasize on only using fish sauce in this dish).
6. Add stock to the sea cucumber and simmer till sauce is thick.
7. Can keep over night and serve the next day for more intense flavour.
