BAKED LAMB & POTATOES

I got this off my boss, when he was getting recipes from his mum.

Ingredients:
1 per person Lamb forequarter chops ( or Pork)
Potatoes, sliced
1 large Onion, sliced
3 cloves Garlic, whole
To taste Salt & Pepper
Oil
Margarine
Water
Directions:
- Fry chops in pan.2 In the meantime, lay sliced onions at the bottom of a baking tray. Place the fried chops on top of the onions. Place the sliced potatoes on top of the meat.3 Add garlic around the baking dish (remove when serving).4 Pour oil on top of the potatoes; add dollops of margarine on top of that. Sprinkle salt and pepper to taste.5 Add water around the bottom of the baking dish and bake for 1 hour or until the potatoes are well cooked and browned on top.
