MIN CHI (Minced Meat and Fried Potatoes)

Min Chi
1 large chopped onion
Shallow or deep fry cubed potatoes until crispy, drain and set aside.
Fry the onions, then add the mince. When the mince is brown, add all the other ingredients.
Toss in the potatoes at the end.
Best served with a runny egg and some mango chutney.
500g minced meat, normally beef
Black soya sauce
Light soya sauce
Dash of Lea and Perrins Sauce
Dash of pepper
1tsp. sugar
Potatoes, cut into tiny cubes

I really like min chee with porridge. It’s the saltiness against the bland softness. 
I also like how gmail can tell me exactly when I asked Mum for the recipe many years ago.
