ROAST PORK with CRACKLING

I've looked online various times for crackling recipes and although I can't remember which site this came from, its the only one that seems to work.

Ingredients:
Your selection of Pork to roast, with a layer of fat on the top.
Salt
Herbs and Aromatics if desired, e.g. minced garlic or lemon rind or rosemary or pepper
Olive Oil
Boiling Water

Directions:
Preheat the oven to hot (220C)
Score the fat into diamonds, pour boiling water the fat to shrink the diamonds and then pat really dry.
Rub the herbs and aromatics and salt into the fat if using. Use less salt than you think you need.
Pour olive oil over all of the fat.

Roast in the oven, 25 mins at high heat, then lower the heat to medium (180C). For every 1/2kg of meat add on another 25min. Rest for 25mins. This ensures the meat is fully cooked, as pork should always be well done.

NB: If your crackling is not crisp by the time the meat is done, cut it off the meat, and continue to cook it under the griller until crisp and bubbled.
