Sea Cucumber
Ingredients
Garlic, chopped
Ginger, sliced
Fresh sea cucumber, clicked
Tau You Bak (Soya Sauce Pork)
Fish Sauce
Chicken Stock
Directions
Heat oil in work. Fry ginger till fragrant then add the sea cucumber. Fry for a while then remove the sea cucumber from the wok and discard ginger.
Blanch the sea cucumber in hot boiling water to remove the oil.
In a clean wok, pour in the chicken stock and double boil the sea cucumber in the stock for 40 mins. Remove the sea cucumber from the stock when done.
Heat oil in a wok and fry the garlic till gragrant, add the tau you back and fry. Then add the sea cucumber and some stock. Use fish sauce to season ( only fish sauce for this dish) and simmer till the sauce is thick.
N.B.: This dish can be kept overnight and be served the next day for a more intense flavor.
