Pork Stir Fry

eg.me loves this Pork Stir Fry that his Mum used to do when he was young, my Mum and Ama do a version of it as well.

eg.me's Mum's version
Ingredients
500g Pork cut into slices
1 large onions, cut into round slices
1 thumb ginger, cut into strips
Dark Soya
brown sugar to caralize
cornflour to thicken

Directions
Marinate pork in dark soya and set aside while you cut other ingredients.
Heat oil and fry onions, add ginger, then add the brown sugar with the pork.
Add the pork in batches if your heat source is not high enough, as we want to stir fry the meat not stew it. The meat may release some liquid but most will be absorbed back in.
Add more soya if necessary, you can use the marinating liquid.
Add cornflour to thicken any residual liquid from the meat, if there is not enough liquid to make a sauce add a little bit of water.

Mum's version
Ingredients

500g Pork cut into slices
1 large onions, cut into round slices
Dark Soya
Light Soya
Shaoxing Wine
Oyster Sauce
Cornflour


Directions
Marinate pork with dark soy, light soy, wine and cornflour.
Fry onions until caramelized, add pork and juices and fry, if necessary add a little more dark soy or oyster sauce.
If there is not enough liquid for the sauce add a little water.
