Apple Yogurt Cupcakes
Every week I make the kids a treat for their lunchboxes and the littleist one loves to stir the batter. This week we had leftover yogurt and some apples so we gave it a try.
The result is surprisingly light and bouncy, rf.me said it was like marshmallows, the texture not the taste. I may in future try a stronger tasting fruit than apples, the whole cake is very mild which is also good but we'll experiment a bit.
The kids ate it with vanilla yogurt icing, which was just yogurt mixed with icing sugar. I was going for a firm icing but it ended up being just sweet yogurt. So we will have to go back to the drawing board on that one.
Ingredients
125g or 1/2 cup melted butter
125 g or 1/2 cup sugar
140 g yogurt (as it comes that way in tiny tubs)
3 eggs
1 tsp vanilla extract
1 cup self raising flour
3 apples, peeled, halved, cored then sliced
Method:
Mix the butter and sugar then add the rest of the wet ingredients.
Stir in the flour.
Dollop into a muffin tray then stick 3 apple slices each into each muffin, vertically. This is so when muffin cookes it will rise up between the apple slices but you will still see a tiny bit of the apple on top.
Bake for 20 mins at 180c.
