CHILLI SAUCE

Ingredients:
500g                      long red chillies
2 inches                Peeled Ginger, cut into small pieces
1/2 clove              garlic, peeled
1/2 to 2/3 cup    white vinegar
1 tsp                       salt
1/2 tsp                  sugar

Directions:
1.       Remove seeds from chillies and cut into smaller pieces.
2.       Put all ingredients, including 1/2 cup vinegar into blender and blend.

If it is a bit thick in texture add more vinegar. Also taste if you need to add more salt. Keeps well in the fridge.

Wear gloves or oil your hands with some cooking oil when handling the chillies!
