BREADED ZUCCHINI

Summary:
From Mum, easiest veggies. 

(It looks burnt but in this case, I used wholemeal breadcrumbs)


Ingredients:
Zucchini, sliced thinly lengthwise
Breadcrumbs
Beaten Egg
Slat and Pepper
Oil to fry

Directions:
1.       Parboil zucchini to make sure it is cooked all the way through.
2.       Dip zucchini strips in the beaten egg then coat in breadcrumbs.
3.      Drop breaded zucchini into oil for deep frying.
4.      Drain on paper towels.
