COCONUT MINCE

Adapted from my cookbook, The Asian Kitchen by Lilian Wu, to suit what I had in the house.

Ingredients:
1                              Onion, sliced
2 cloves               Garlic, sliced
to taste                 Salt, pepper, chilli powder
500g                      Beef mince
1 bunch                Coriander stems, chopped
1 bunch                 Spring onion (green part), chopped
½ can                   Coconut milk

Directions:
1.       Fry onions in oil, then add garlic, salt, pepper and chilli powder.
2.       Add beef mince and fry till browned.
3.       Add coriander, spring onions and coconut milk and simmer till most of the liquid is absorbed.
