TOMATO MACARONI

From my boss’ collection of his mother’s recipes. Serves 4.

Ingredients:
500g               Macaroni
500g               Beef mince
250g               Ricotta cheese
6                      Eggs
                        Tomato Paste
1 Tin               Tomatoes, diced
                        Parmesan cheese
                        Milk

Directions:
1.       Preheat oven to 180C.
2.      Boil macaroni in saucepan until tender.
3.      Fry mince until well cooked. Add tomato paste and diced tomatoes and let simmer.
4.      Mix eggs, ricotta and milk in a bowl.
5.      Add mince to pasta with egg mix. Put into a baking dish and spread with parmesan. Bake for 45 mins.
