Easy fall back with things from the freezer.
3 sheets Frozen Puff Pastry that has been defrosted and cut into quaters
2 handfuls Grated Tasty Cheese
2 x 300g Frozen Spinach, defrosted
3 clovesGarlic, chopped
2 tbs Butter to cook
Salt to taste
2 Eggs, beaten
2 handfuls, Breadcrumbs
Pre-heat oven to 200C.
Oil a cupcake tray. Line with puff pastry and blind bake in the oven. Sometimes I short cut and just partially bake.
Fry the garlic in butter and add the spinach and salt.
Spoon the spinach mixture into the pastry cases. Spoon the beaten egg over. The spinach.
Sprinkle grated cheese then breadcrumbs on top.
Bake until cheese is golden brown.
