卤肉 Loh Bak (Black Pork with Hard Boiled Eggs)
½ bulb of garlic, whole
1 thumb of ginger, whole
½ kg of pork
Fry the pork till browned in a stock pot.
Add all other ingredients except the eggs, bring up to the boil then lower the heat and simmer for 2 hours.
For the last ½ hour add the peeled boiled eggs.
Stir occasionally to make sure nothing sticks to the bottom and burns.
