Bacon and Avocado Salad

I had the most wonderful avocado salad at a friend’s lunch this month. It was hosted and all food done by her sisters before her baby arrived in two weeks’ time, such a loving gesture.
I can’t seem to replicate that salad which was creamy and beautiful just greens only.
But this attempt was popular with eg.me who does not really like salad at all, and I like it too.

Ingredients
Your favourite salad leaves, we like baby spinach and rocket
Bacon, the streaky parts

Dressing:
Avocado
Balsamic Vinegar
Olive Oil
Salt & Pepper.

Directions
Grill, oven or fry the bacon till on the more crispy side.
While that is happening, wash and drain your leaves and set aside in a large bowl.
Make the dressing by mashing the avocado, add 3 parts olive oil to 1 part balsamic vinegar and season to taste with salt and pepper. It will be a sort of thick mushy dressing so instead of just a quick toss through the leaves, you may have to take some care to make sure all leaves have a little coating.
Once the bacon is done, snip with scissors into bits over the salad while still warm.
