I've yet to see cakes like this in real life but have seen books being sold about them. 

Strangely, I have seen lots of fishcakes on popsticks like this. I image that they make the fishcakes like those sugar sweets, rolling coloured fish cakes into long sausages, then slicing them then sticking them on sticks.
