Vanilla Fudge Cakes

This is my darling daughter's original creation, which she made by herself while I was taking a nap. It is incredibly sweet but so yummy. Well done sw.me!

She took the base recipe from a little book that came with a scholastics book/toy " itty-bitty Baking by Delia Greve" but used condensed milk instead as we had run out of milk at home.


The result is this fudgey concocotion that has a slight biscuity flavour. I think next time round we shall experiment with no sugar and less condensed milk and put a tray under the tin to collect overflowing batter.

Ingredients
1 1/2 cup or 300g sugar
3/4 cup or 171g flour unsalted butter at room temperature
3 eggs
3 tsp or 15ml vanilla
2 1/4 cups flour  or 288g flour ( we used wholemeal because that is all we had in the house)
1tsp or 15g baking powder
3/4 cup or 240ml milk (we used a 395 ml can of condensed milk because that is all we had in the house, 240 as part of the batter and the rest poured on top)
butter to grease the muffin tin.

Directions
Preheat oven to 175C
Butter the muffin tin.
Mix all ingredients with a beater in a bowl till smooth.
Pour into the muffin tin.
Pour the extra condensed milk on top.
Bake for about 1/2 hr. You will see the batter foam up and and sort of expand everywhere and then towards the end it will sink and form a hard crust.
Remove from the oven, when still warm but not so hot it burns you remove from the tin and wash the tin or else it will just stick on and never come off.
You'll get these sort of sunken cups which you can put ice cream in! It tastes nice warm.
